Char-grilled steak with chilli corn salsa

INGREDIENTS
3 x 100g small lean beef steaks
Chilli corn salsa
3 corn cobs
1 large tomato, seeded and cut into dice
1/2 red Spanish onion, finely chopped
2 small red chillies, seeded and finely chopped
1 bunch chives, chopped
1 bunch coriander, picked and finely chopped
2 tablespoons balsamic vinegar
2 tablespoons olive oil
METHOD
- To make the chilli corn salsa, put the corn cobs in a saucepan of boiling water and
cook for 5 minutes. Drain.
- Use a sharp knife to cut the kernels from the cobs then place them in a bowl. Add the tomatoes, onion, chilli, half the chives and half the coriander.
- Whisk together the vinegar and oil and toss through the salsa. Top with the remaining herbs.
- Char-grill or barbecue the steaks to your liking.
